Pears and ricotta cups with a Passito wine

A very easy dessert to make, also ideal as a healthy snack for the little ones. Raisins and honey are the sweeteners of this elegant recipe in its simplicity.
As a dessert, at the end of a meal, we suggest to match cups with Vino Privilegio 2017  by Feudi di San Gregorio winery, Irpinia Fiano Passito DOC. On the olfactory examination highlight intense notes of withered yellow flowers including dandelion and chamomile, fragrant notes of apricot jam and citrus jam with hints of dried fruit, reminiscent of almond and hazelnut, notes sweet, but not cloying and mineral finishes that recall the scents of the coast with brackish suggestions.

Privilegio 2017 - Feudi di San Gregorio

Ingredients for 4 people)
2 tbsp raisins (palm oil free)
2 tbsp dessert wine
3 pears
2 tbsp honey
The juice of 1 blood orange
150 g ricotta, drained
Ground cinnamon, to taste

Method:
  1. Wash the raisins and soak them in warm water with a dessert wine.
  2. Peel the pears, cut them into cubes and put them in a saucepan with the honey and orange juice. Cook over medium heat for ten minutes and then let cool.
  3. Mix the pear sauce with the ricotta and the drained raisins and blend in a blender at full power.
  4. Pour the cream into four glass bowls, sprinkle with cinnamon and serve immediately.
