Italian chocolate salami and a Porto Wine

Ingredients for 8-10 serves
  • 300 g 70% dark chocolate
  • 150 g dry digestive cookies, palm oil free, chopped
  • 4 tbsp raw sugar
  • 50 g  cocoa powder
  • 100 g chopped roasted hazelnuts
  • 100 g roasted pistachios
  • 300 g 70% dark chocolate
  • 80 ml warm milk (or vegetable drink)
  • 2 tbsp Porto (to be avoided if the dessert is made for children)
 Method:
  1. Chop the cookies and add them to the sugar, cocoa powder, hazelnuts and pistachios.
  2. Melt the chocolate in a double boiler. When cool add the Porto wine and stir into the cookie mixture.
  3. Add the milk.
  4. Pour the dough onto parchment paper, sprinkle with more cocoa powder and work it into a sausage shape. Keep the dough wrapped in parchment paper and store in the refrigerator for 4–5 hours.
  5. Remove the salami from the refrigerator 20 minutes before serving.
