Pasta with Seitan sauce (or Ragù) is a sustainable recipe. You don’t need to spend hours in the kitchen because it can be made in less than half an hour. For a gluten-free sauce, you can replace seitan with tofu.
This delicious recipe is made with organic seitan and tomato sauce and with sicilian wholemeal pasta from ancient grain Biancolilla flour.
Pasta with Seitan sauce: Ingredients
1 stalk of celery
Extra virgin olive oil, to taste
150 g (5 oz) seitan (better if seitan burger)
250 g (9 oz) organic tomato sauce
Pinch of sea salt
320 g (11¼ oz) wholemeal short pasta
Pasta with Seitan sauce: Method
- Wash and cut the carrot, onion and celery and cook in a pan with extra virgin olive oil until golden brown.
- Cut the seitan into cubes and add it to the vegetables when they are almost cooked. Pour the tomato sauce and salt over and cook for 15 minutes over a low heat. Once the sauce has become lukewarm, blend it with an imersion blender for a more creamy effect.
- Cook the pasta al dente, drain and add to the sauce.
