Almonds cookies with honey

The secret to these delicious crumbly almonds cookies with honey is toasted almond flour. Almond flour differs from traditional flours because it is not based on wheat or other grains. Almonds are an important source of magnesium, a mineral that supports the activities of the nervous system. You can find it in health food stores or in the best organic supermarkets. You can also prepare it at home, toasting the almonds in the oven for five minutes and, once cooled, chop them in a food processor.

The result will be crispy and fragrant egg free almond cookies with honey. The olive oil pastry gives a special, healthy and delicious touch.

Almonds cookies with honey: Ingredients

Makes 15 cookies

75 (3 oz) extra virgin olive oil

50 ml (2 fl oz) organic rice milk

100 g (3½ oz) raw honey

Juice of 1 orange

100 g (3½ oz) white Farro flour

150 (5 oz) toasted almonds flour

Pinch of sea salt

Almonds cookies with honey: Method

  1. Preheat the oven to 180°C (350°F).
  2. Mix all the ingredients in the order shown to form a compact dough.
  3. Create the desired shape and place the cookies on a baking sheet, covered with baking paper.
  4. Bake for 10 minutes.
