Ideal for breakfast, with afternoon tea or as a simple snack, they are a healthy and very versatile proposal.
Of course, my shortcrust pastry is, as always, madewith extra virgin olive oil. A delicate EVOO that makes the pastry crunchy to the point, healthy and nutritious.

Orange gluten free cookies: Ingredients
Makes about 15 cookies
One orange zest, untreated
75 ml (3 fl oz) organic orange juice
75 ml (3 fl oz) orange honey
100 ml mild extra virgin olive oil
300 g (11 oz) brown rice flour, stone ground
1 tbsp organic baking powder
1 large beaten egg and yolk
1 tbsp orange yogurt
1 tsp organic vanilla powder “Bourbon”
Orange GF cookies: Method
- In a bowl, mix, the orange zest with its juice, honey and EVOO.
- Mix the flour and the baking powder.
- Add the remaining ingredients and knead quickly.
- Form a ball and, with molds, make the desired shapes.
- Bake at 180°C (350°F) for 10–12 minutes.
