COCOA VEGAN TARTS WITH PEARS AND CINNAMON JAM

Vegan pear tarts, with pears and cinnamon jam is a very delicate dessert, with a refined taste, ideal not only for breakfast or snack but also as a dessert, if paired with a good Italian dessert wine such as Marsala or Passito di Pantelleria.

A delicious olive oil shortcrust pastry, prepared with unrefined ingredients, is enhanced by a pear jam made special by the combination of cocoa and cinnamon.

Vegan pear tarts: Ingredients

Make 4/6

150 ml (5 fl oz) mild extra virgin olive oil or 200 ml (7 fl oz) organic cold pressed sunflower oil

50 ml (2 fl oz) almond milk, unsweetened

80 g (2 oz) raw coconut sugar

300 g (11 oz) oat flour

100 g (3½ fl oz) cornstarch-cornflour

1 tsp baking powder

Pinch of sea salt

1 tbsp raw cocoa powder

For the jam:

15 organic ripe pears

150 g (5 oz) raw coconut sugar

1 tbsp raw cocoa powder

1 tsp ground cinnamon

Vegan pear tarts: Method

  1. In a bowl, emulsify the almond oil and milk with the sugar.
  2. Add the flour, baking powder, salt, cocoa and mix until it forms a soft but compact dough. Form a ball and put aside.
  3. Wash cut the pears (leave the peel since they are organic).
  4. In a saucepan with high sides, pour the pears, add the sugar, the cocoa, cinnamon and cook until you get a creamy mixture. Let it rest in the fridge.
  5. Roll out the pastry and cut it into rounds a little bigger than the tins.  Line each tin with a disc of pastry. Prick the pastry bases and cover them with the pear jam.
  6. Bake, in preheated oven, at 180° (350°F/Gas 4) for 25 minutes.
