Radicchio and orange salad

Radicchio and orange salad or a praise of winter. The combination of vegetables and fruit is so fascinating, especially when it comes to powerful and truly beneficial ingredients for the body.
As many of you know, radicchio is rich in antioxidants, iron (to better absorb the latter it is advisable to add lemon juice to the dressing), it has an interesting purifying action and helps reduce cholesterol, also thanks to phytosterols. 

Not everyone loves its bitter taste, yet, it is precisely this characteristic that improves digestion and liver function.

As for oranges, in addition to the known benefits, recent studies have found that they help in the formation of collagen, bones, teeth, red blood cells, promoting the absorption of iron from food and protecting against infections.
The addition of extra virgin olive oil not as a condiment but as a food, as it is right to call it, makes this salad a concentrate of well-being and flavors, in which bitter, sweet and slightly spicy notes make this dish, also ideal as a fast breaker.

Radicchio and orange salad: Ingredients

Serves 4

2 blood oranges

6 radicchio leaves

1 tbsp apple cider vinegar

3 tbsp Extra virgin olive oil

Pinch of sea salt

White pepper, to taste

Radicchio and orange salad: Method

  1. Peel the oranges, removing the white skin and cut into wedges.
  2. Washed, dried and coarsely chopped the radicchio.
  3. Season with vinegar, oil, salt and pepper and serve immediately.
