Production area: hilly area of the Municipality of Pontelatone, at the foot of Mount Friento in the province of Caserta.
Soil type: clayey with notable presence of exotic carbonates, south-west exposure, altitude of 200 m a.s.l..
Training system vines: Guyot.
Plant density: 3076 plants/ha.
Yield of grapes per hectare: 70 quintals.
Harvest: Manual harvest in 20 kg plastic crates.
Harvesting period: I – II decade of October.
Vinification technique: the harvested grapes are immediately taken to the cellar, where they undergo crushing and destemming. The tumultuous fermentation takes place in aisi 304 stainless steel fermenters at a controlled temperature, and after the malolactic fermentation that always takes place in the aforementioned fermenters at a controlled temperature of 18-20 ° C, a refinement in oak barrels takes place for 5-6 months.
