OLITHEA: Corfu Extra virgin olive oil

Known for its International tourism, Corfu is one of the most visited Greek Islands. With 200 km of coasts, golden beaches, millenary art and culture, Corfu is also an ideal destination for culinary experiences where the ingredients of the territory, the result of unspoiled nature, are the added value. Corfu is also a symbol of history, beauty, of ancient civilizations that have always cultivated the olive tree here.

It is not surprising, therefore, that even here, the local cuisine, rich and healthy, is based on Extra virgin olive oil.

The microclimate is perfect for the cultivation of the olive tree: sea breeze and hill air are the ideal combination to produce a special olive juice.

In this little corner of paradise, in 2016, Angelos Andriotis and Sandra Specker-Andriotis founded Olithea. After living for many years in Switzerland, Sandra and Angelos decided to return to Corfu to devote themselves professionally to the cultivation of the olive trees that the Andriotis family had owned for many generations. The result was the Olithea Premium Organic Extra Virgin Olive Oil. “Our philosophy – explains Nikos Andriotis – marketing manager of the family business – is absolute respect for secular trees, the uniqueness of the autochthonous variety” Lianolia”, according to the strict disciplinary of organic agriculture, makes us produce the best olive oil that our land can give.

Leaving to return because the roots when you are born in such a special place cannot be severed: “The roots of our family are directly linked to Corfu and are creatively combined with the roots of our olive groves, Nikos says. Producing a unique Extra virgin olive oil was an inevitable request for us. An urgent natural evolution, present in every drop of the best olive oil that our land produces. Olithea is an authentic Corfiot Extra virgin olive oil, made by Corfioti (and a Swiss)”.

“The olive groves, explains Nikos, are located in the southwestern part of Corfu, in the village of Agios Mathaios, a true paradise of olive trees”, where the microclimate already described, typical of the island, allows the production of an EVOO rich in flavor and nutrients.

The particular climatic predisposition, as well as the attention with which the fields are cultivated and the use of a technology that allows you to have a healthy product from every point of view are essential elements but would not be enough without a truly unique native olive of its kind. “Lianolia” is a dominant variety of the area, Nikos continues, with balanced characteristics of bitter and spicy and intense fruity. It is a variety that gives olive oil exceptionally rich in beneficial polyphenols and antioxidants.

“Lianolia” is the gem of Corfu, the starting point of everything. A variety with peculiar characteristics that distinguish it from any other Greek or foreign variety.

All the trees in the family olive grove are planted with love by the hand of people they have known and, above all, have been emotionally linked to their land, explains Nikos. Since then, each generation has learned from the previous one how to keep the trees “well fed” and happy. And the modern standards of organic farming impose the good health of each tree and guarantee the highest quality of each fruit”.

Olithea is organic EVOO as Nikos points out: “We follow the rigorous principles of organic farming in all groves, under the supervision of agronomists specialized in the sector and under the control of the “DIO”.

Each day spent in the olive grove is a different and always special day. Each season has its own rhythms and the olive groves have different needs: “There are days when the olive grove has to be pruned, cleaned and lubricated according to the season, explains Nikos. But what happens throughout the year every day is our mental and physical contact with the olive grove. We give our love and respect to the olive trees, and they in turn give us the strength, calm and wisdom they have for us to continue”.

Work in the fields is certainly the most delicate but the entire production phase, up to bottling, needs to be planned in detail. Packaging, for example, is one of these, Nikos emphasizes: “A unique food like Οlithea deserves an equally elegant packaging. That’s why we offer our product in two splendid 500ml and 100ml opaque glass bottles”.
