Tasting Notes
Upon examination in the glass, the sample is crystalline, straw yellow in color with slight greenish reflections, with a good consistency.
The olfactory examination highlights a fairly complex bouquet of aromas, but of fine quality with good intensity. The nose shows hints of white mountain flowers, followed by aromas of fresh fruits reminiscent of green apple, topped by a note of white peach and apricot, close to important mineral notes of wet slate and sodium.
The sip is very fresh, the acid shoulder is good and invites you to take a new sip. It is confirmed when perceived on the nose, but, to what has already been highlighted, hints of ripe, almost tropical fruit are added. The persistence is important, with an aftertaste of aromatic herbs reminiscent of sage and thyme, a nuance of balsamic.
It is recommended in combination with an appetizer based on foie gras.
