BODEGA SOMMOS – SPAIN

SOMMOS is a winery in the heart of Somontano, known for being “one of the architectural wonders of the wine world”, according to the international press.
The vinification space reaches a height of 27 meters and is designed to take advantage of gravity to move the grapes as they turn into must and then into wine, avoiding the conventional use of pumps.
The vats are in French oak and the tanks in stainless steel and concrete of various sizes to allow you to separate each plot during the vinification, enhancing the potential of its terroir in the individual wines.
The company uses optical sorting equipment to select each berry. The grapes are harvested in the moonlight, when temperatures are low. A layer of dry ice prevents fermentation in hermetically sealed isothermal trailers which prevent dust and insects from interfering with the journey to the cellar.
