The harvest: light withering of the grapes on the vine, harvested by hand in plastic crates with careful selection of the bunches, transported by truck with an isothermal cell.
In the cellar: sorting table, de-stemming, soft pressing of the grapes, maceration in 70 Hl stainless steel vats, skin contact – must for two to three weeks, temperature control of the marc hair, 2 delestage per day. Pressing of the pomace with vertical hydraulic press with stainless steel cage. After racking immediately in 50% new and 50% second passage French oak barriques. Daily batonnage until the first racking. After about 9 months of aging in wood, the wine without the aid of clarifiers and without tartaric precipitations is bottled and after about 6 months of aging it is released for consumption.
Clear, almost impenetrable intense ruby red color, good consistency.
On the nose the sample is broad and complex in its scents: floral, spicy and toasted fruity. Pot pourri of red flowers; fruity notes of wild strawberries, blueberry, cherry and blood orange follow; spicy notes of nutmeg and licorice, toasts reminiscent of sweet tobacco and cigar box. Delicate nuance of Mediterranean herbs.
The sip is rich and opulent. Important tannin, perfectly balanced and silky. Perfectly balanced wine in its parts, persistent and very intense. Aftertaste of cigar box and ripe fruit.
It is recommended in combination with rabbit roll with aromatic herbs.
