Crushing: grapes harvested by hand in small boxes in the early morning. Destem, cool and press softly.

Refinement in the bottle: at least 4 months at a constant temperature (18° C).
The sample to the eye is crystalline, of an intense straw yellow color with golden reflections, not particularly consistent.
The range of scents is intense, complex and fine. Aromas are perceived: floral, fruity, herbaceous and mineral. Notes of white flowers open the bouquet of this sample reminiscent of jasmine and elderberry flowers, followed by interesting hints of very intense and ripe white fruits including snuff peach and abbot pear, herbaceous suggestions whet the nose accompanied by mineral hints that recall the brackish with balsamic undertones and scents of Mediterranean herbs.
Captivating aromas with well-balanced acidity and flavor, but still important, we suggest a further period of refinement for a perfect balance of the various components, noteworthy are the intensity and persistence taste of olfactory synonymous with quality.
It is recommended in combination with cod creamed with leek on carasau bread croutons.
