Varietal composition: 65% Cabernet Sauvignon, 25% Merlot, 10% Cabernet Franc.
Denomination: Bolgheri Superiore D.O.C..
Alcoholic strength: 15% vol.
Vintage: 2016.
Geographical location: Cabernet Sauvignon from Via Bolgherese (3.00 Ha); Merlot, Cabernet Franc and Cabernet Sauvignon from the Le Sondraie vineyard (12.00 Ha).
Altitude: Via Bolgherese 56 m a.s.l.; Le Sondraie 25 m a.s.l.
Exposure: West – South/West.
Soil type: Via Bolgherese: Deep, with coarse red sands, rich in skeleton, well drained, and with a clayey layer at a depth of 1.20 meters. Slightly sub-alkaline. Le Sondraie: clayey, with well-drained loose sands, characterized by a high presence of magnesium and iron.
Training system: Spurred cordon.
Average age of the vines: 19 years.
Plant density: Via Bolgherese 9,000 vines / Ha; Le Sondraie: 7,936 vines / Ha.
Vinification: After destemming, soft pressing with partial breaking of the berries
Fermentation: In stainless steel at a controlled temperature
Fermentation temperature: 28/30 ° C.
Duration of fermentation: 12-15 days.
Malolactic fermentation: Naturally carried out in barriques at a temperature of 22 ° C in November.
Aging: 22 months in 225 liter French oak barriques 70% new and 30% second passage.
Serving temperature: 16°/18° C.

Tasting Notes
Limpid, very intense and bright ruby red color, consistent.
The nose is very intense in its bouquet of ample and complex aromas. The fruity component is dominant with hints of ripe fruit, jelly of small berries, black cherry, plum and cherry. There are aromas of flowers reminiscent of peony and undergrowth, but also evident notes of black pepper and precious spices, with delicate balsamic hints of Mediterranean scrub. In the mouth the tannin is perfectly integrated.
The sip is satisfying with an important persistence of ripe fruit and spices. A real pleasure for the palate.
Recommended in combination with woodcock croutons.
