Production area: Les Cretes of Aymavilles.
Soil (type, exposure, elevation): moraine, loose, sandy sloping with west exposure. Altitude from 650 to 800 meters above sea level
First year of production: 2017
Bottles produced per year: 900
Surface, training system, plant density, yield: about 0.60 ha, Guyot system; 7,500 feet per hectare plant, ridge rows and retouching. Yield 4,000 kg / ha.
Harvest: manual, early October.
Vinification: Selection and refrigeration of the grapes, destemming and cryo maceration for 2 days. 12 days of fermentation in stainless steel at 23 ° C. Racking and aging for 18 months in used 700 l tonneaux. bottling without filtration and stabilization. 18 months of bottle aging.
