Grapes: 100% Vermentino.
Vineyard: Sterpeti, Tizzi and Poggio Bestiale vineyards.
Type of soil: medium mixture rich in skeleton.
Position: 150 and 250 meters above sea level.
Exposure: North, North-East.
Plant density: 6400 plants / hectare.
Training system: bilateral spurred cordon.
Planting year: 1998-2002.
Average production per plant: 1000 grams.
Number of bottles produced: 30,000.
Wine: organic.
Average harvest period: last ten days of August.
Vinification technique: destemming, cryomaceration, pressing and subsequent fermentation at a controlled temperature in temperature-controlled stainless steel tanks for 20-25 days.
Maturation: maturation on the fine lees for 3 months.
Refinement in the bottle: at least 2 months.
Stabilization of the product: cold.

Tasting Notes
Crystalline, straw yellow in color with golden reflections, of moderate consistency.
The nose shows floral, fruity and herbaceous notes. Hints of white flowers reminiscent of hawthorn and lily of the valley, yellow-fleshed fruits such as peach and pear, aromatic herbs and Mediterranean scrub.
On the palate the sample is well balanced in its parts, the sip is particularly fresh and persistent, with a herbaceous aftertaste.
It is recommended in combination with a Catalan of prawns.
