Alcoholic strength: 14.5% vol.

Production area: Arezzo.
Altitude of the vineyard: 300 meters
Yield in liters / hectare: 5000 liters / ha.
Training system: Spurred cordon
Harvest period: first ten days of October.
Date of release on the market: December of two years following the harvest year.
Alcoholic fermentation and maceration: the de-stemmed bunches are not pressed in order to respect the maximum integrity of the skins. During alcoholic fermentation, frequent punching down is carried out to facilitate the extraction of aromas, color and tannins from the marc. After the maceration, which varies from 8 to 12 days, the racking is carried out.
Malolactic fermentation and aging: After racking, the wine is decanted and undergoes the malolactic fermentation. Psyco is aged in 225 and 500 liter oak barrels for 12 months; before being released for consumption it spends 12 months in the bottle.
Serving temperature: 16°-18° C.

Tasting Notes
Limpid, with an intense and lively ruby red color, consistent.
On the nose there are notes of red flowers reminiscent of a pot pourri, followed by hints of ripe dark berry fruit, aromas of sweet spices such as vanilla and cinnamon accompanied by notes of licorice. Aromas of precious woods reminiscent of the cigar box.
The sip is rich and opulent. Balanced in its components, it shows a good tannic texture accompanied by a good persistence on the nose, reminiscent of a ripe fruit.
It is recommended in combination with traditional Tuscan meat dishes.
