Wine: Sangioveto
Variety composition: 100% Sangiovese.
Denomination: I.G.T. Tuscany – Organic.
Alcoholic strength: 14% vol.
Vintage: 2015.
Production area: Gaiole in Chianti (Siena).
Vineyard: Chianti Classico.
Altitude: 260 – 370 m. s.l.m.
Exposure: South, South-West.
Soil: medium mixture rich in skeleton.
Vineyard age: 29 31 years.
Training system: Guyot.
Density (plants per hectare): 5,500 – 6,600.
Harvesting method: manual choosing from the most favorable exposures.
Vinification: Natural fermentation with indigenous yeasts, maceration of 4 5 weeks on the skins, fulling.
Aging: 12-16 months in 10% new French oak barriques.
Refinement: minimum 6 months in the bottle.
Serving temperature: 18° C.
Production: 8,200.
2015 vintage: early start after a mild winter; abundant rains in winter and spring. The first heat wave in late May, then 10 weeks of very hot weather between mid-July and mid-August. Mild weather in autumn, with just the right amount of rain. One of the best harvests in recent years. Extremely healthy grapes, almost no use of the sorting table. Excellent yield with high quality.
Harvest: 9th September / 7th October.

Tasting Notes
Limpid, very intense ruby red color with light purple reflections visible on the nail, consistent.
On the nose the range of aromas is broad and complex. Floral notes reminiscent of a potpourri of red flowers, fruity scent of small dark berry fruits such as blackberry and currant, delicate strawberry nuance. Notes of sweet spices such as cinnamon, cloves and vanilla. Closing with a very slight balsamic note.
The sip is opulent, fresh, with a good, perfectly balanced acid shoulder. Tannin is important but not invasive. Wine with great aging potential. The closure is very persistent.
It is recommended in combination with game-based dishes.
